Ingredients

  • 8 oz cream cheese softened
  • 2 tbsp keto sweetener
  • 2 tbsp heavy cream
  • ¼ tsp vanilla extract
  • 1 pc egg lightly beaten
  • melted low-carb chocolate and berries optional

Instructions

  • In a small bowl, use an electric mixer on low speed to blend the cream cheese until smooth. 
  • Add the sweetener, heavy cream, and vanilla and beat again.
  • Add the egg last and continue to beat until fully incorporated.
  • Distribute the batter evenly in two mugs or ramekins. 
  • Cook one at a time in the microwave for 1 minute and 30 seconds. Continue cooking in 30 second intervals until the center is set, but still very soft.
  • Allow the mug cake to cool to room temperature, then chill in the refrigerator until completely cooled. 
  • Serve with desired toppings.
